  1. Put all of the ingredients into a food processor. If you don’t have or don’t want to do the olive brine, just use salt to taste instead. The amount of lemon juice and tahini is also a bit of a personal preference, so alter accordingly!
  2. Blend up in the food processor until very smooth and creamy. Taste and add in more flavorings if needed.
  3. Once pureed and seasoned to your taste, serve up in a dish with anything you’d like to dip in it. I often use cucumbers or baby carrots as a nice healthy snack, though I think toasted pita triangles might be my favorite vehicle for it. Drizzle some extra olive oil on top for extra flavor and creaminess. Bon appetit!
